Inside the Crystal Dining Room, the New Year’s Eve Celebration and five-course prix fixe dinner begin at 8 p.m. Guests will enjoy a carefully crafted menu that blends classic flavors with a refined touch.
The Menu
Amuse – Pan-seared sea scallop with Pernod spinach and red pepper foam
Potage – Black-eyed pea soup with collard green drizzle and fresh honey corn muffin
Salade – Radicchio cup filled with heritage mixed greens, heirloom tomatoes, and aged balsamic glaze
Le Plat Principal – Medallion of beef tenderloin with Cabernet Sauvignon glace, sea bass with basil pea purée, garlic smashed potatoes, asparagus, and baby carrots
Fini – Flourless chocolate torte with raspberry compote and fresh vanilla crème
Guests may modify their main course to all beef, all fish, or a vegetarian option – Portobello mushroom cap filled with spinach and sun-dried tomato jam, finished with a balsamic glaze
After dinner, the celebration continues with music and dancing from Annie and the Fur Trappers, leading up to the Cold Sparkle Countdown on the Back Porch at midnight.
